Single Edged – Hongasumi Blue Steel
These Hongasumi knives pair a core of high-carbon Blue Steel (Aogami) with a soft iron jacket in traditional two-layer construction. Blue Steel is White Steel with added chromium and tungsten. It holds its edge noticeably longer and resists chipping better, though it takes slightly more effort to sharpen.
For chefs who use a traditional knife through a long service, Hongasumi Blue Steel is a dependable workhorse. This collection includes yanagi, deba, Edo and Kama usuba, mioroshi and kiritsuke, with magnolia, rosewood, shitan and yew handles. For the White Steel equivalent, see Hongasumi White Steel.
